Aluminium in our heads is heat treated to harden it, annealing is the term for removing this heat treating and returning the head to T0 state full soft and can happen if a head is overheated.

Full flow are usually 1/2" in and out and header tank design, bypass are usually smaller in/out and 1 tube like a trans cooler.
I use the B&M T Stat but permacool have the exact same unit much cheaper.
Not a big fan of AS it's very conductive and can cause HUGE issues if you're not careful in the application!
Been watercooled for 4>5 years now and would never go back to air cooled!
