If you've got it on the bench, heat the coil with a hot air gun and see if it rotates the control shaft attached to the coil. It doesn't move a whole lot, but if you mark it with a sharpie you should see some rotation.

Correct. The stock gauge actually goes down (!!!) from 221 to 234 degF, then it shoots up fast hitting 100% on the scale at 248 degF.
It basically useless for measuring temperature, but is a good warning light for overheating...

Not sure I understand exactly what you hooked up to the starter. Did you hook a ground up to the big +ve cable on the starter?
It seems like maybe there is a possibility of some damage from reverse polarity, but need more info. Often the fusible links will blow if things get hooked up wrong...

Did you confirm that your CEL comes on with the ignition?
If you really have a CPS problem it should set code 12 after more than 2 seconds of cranking.
I did a quick read through, and you have fuel but no spark it would seem.
If you pull the CPS and rotate it by hand with the ignition on you should see the plugs fire.
If the CPS is bad it should set code 12 after cranking. Do you have code 12?
How reliable is your wiring on that side...
