Why not just test the T Stat instead of replacing?
Pot of water on the stove heat it up and watch it ;)

Sounds like Condensation, be an idea to drop the oil into a clean/clear container and let it sit for a day, if there's coolant in there it will seperate.
My "tip" was just to clean up an otherwise good crank that's been checked for roundness as with Lapping Blocks/Heads it's just a finish procedure NOT an alternative for proper machine work.
As I said in a previous post there's something else wrong, Undertray missing is +5c so if the cooling system is marginal for any reason that is often enough to tip it over the edge...
Even just the row of bolts missing under the Rad support is enough to see a 3c rise in engine temps.

Can take it to a shop and they can pull the tanks and rod it out, that'll cover the internal blockages, a lot of the time there's 15+ years of leaves and bugs in the fins of the rad and the AC core, time consuming PITA to clean out but well worth it.
