Composite gaskets are good for plenty of power. I am moving to an HKS gasket now, but I'll still suggest composite for most of the folks here, especially if they are planning on less than 400rwhp.
Actually... from what I understand, the ECU learns from how you drive. So, if you drive with your foot to the floor all the time, it's going to gradually become more powerful at the expense of economy. And if you always drive timid, it'll do the opposite.

You can tune it with an adjustable fuel pressure regulator or by adding 550s. The screw is rather unlikely to give you enough range by itself.

The problem is that your engine needs to be on to dissipate the heat it generates. When you turn it off, heat from the engine will boil coolant in the block and fuel in the fuel rail instead of being handled by the radiator, because your water pump only runs with the engine.
