Last time I dropped a tranny was Duane's when we put in the Spec multi-plate setup. We had FOUR people on the job who knew what they were doing (one of whom is a professional Toyota wrench) and Duane's setup has a lot more room to work than most. Still...
I've actually seen this test repeated several times over the years by different groups, with very similar results. Otherwise I'd be questioning the bias as well!
Duane has had a cage for years. It makes working under the driver's side dash a pain. Ask me how I know.
Will Neely's old car, on the other hand... ~750 torque, no cage. :)
And yes, the bearings are an extremely easy indicator. :)
Very early stages of RK can come and go, but they will be easy to reproduce on demand - park the car in neutral, let it idle, then blip the throttle so that the RPMs bounce up to about 3k, you'll hear the knock as the RPMs peak and start...

I use one... I'm reasonably certain you can datalog with it - to a laptop, of course. I haven't done so, because it's connected to my MAFT Pro, and that datalogs it for me.
Yup, that will be something wrong with the hydraulics. Check that the slave is pushing on the fork by looking through the driver side inspection plate. Check that the slave is actually pushing when you depress the pedal.
