I took all the studs out when I did my head work. One of my buddies had his engine rebuilt in a shop before though and they put the studs in upside down....so he had to do some...err....modifications....to the firewall to get the head out without pulling the engine. He was not a happy camper.

The head torque depends on a bunch of things. Are you using stock head bolts, arp bolts, or arp studs? Are you using the ARP lubricant or oil when installing them?
If you're going to be draining the oil, just crack the drain plug and catch some of the fluid in a small clear container first. Make sure it's been sitting for at least a couple hours before doing this. If you've got coolant getting in to the oil at all, you'll see it come out of the drain...
