The mk4 rear rotor requires a centering ring- the mk3 hub od is 60.1 mm and the rotor bore id is 62.1 mm. E-brake works perfectly.

Why mess around with the knightpager kit for the rear when adapting the mk4 rear brakes will cost you the price of the calipers and rotors, and another $100 for machining. If you have access to a machine shop, even better - the parts are extremely easy to make. To answer your original...

steam cleaning (in solution for a couple days) should take off the majority of the crap. You will waste your time with mineral spirits/varsol/etc - it requires a lot of work to even get the oily residue free. Ultrasonic cleaning (if you have access) with a detergent solution (eg. alconox)...
