Well, if you cant afford to send the block out to get prepped, then you would be wasting your money on prepping the head and buying the new headgasket. It doesnt matter what kind of headgasket you get if you dont make sure the surfaces are prepped.

What tire pressure were you at? I had similar problems when I went to the track, it was either spinning or bogging. I dropped the tire pressure to like 16 lbs or something like that and launched at 6K, and the car hooked. I was able to run a 12.67 with a shot suspension and almost 100 less...

I think you have it backwards....there isnt anything wrong with the design of the 7M or the headgasket, but it was the torque specs that cause the headgasket to fail. I replaced my HG with a cometic and ARP headstuds on a resurfaced block and head and havent had any problems.
