Can always either refil the clutch fan with new fluid or get a new or good used one. The 1hp gain you get from removing it is lost in amp draws on the alternator.
You can find used maft pro's for 500 and then havfuel control, timing control, boost control, and wideband.
Or you can get the standard maft for 400 new and run speed density.
Or you can get the maft gen II and run the gm blow through sensor and just mount the sensor somewhere in the ic piping.
They should work fine.
If they are too tall they will just be about as tall as the top of the valve cover. Just need to make a mounting bracket for them.

You need ecu grounds. There are 2 grounds on the intake manifold for the ecu. Grounding the block to the chassis and head is not going to do that.
They go from the ecu through the harness to the manifold.
Yes it is. Or else its going to take forever for the oil to warm up. Stock goes off pressure so no oil even goes into the oil cooler until you reach the pop off pressure for it to go to the cooler. And then it just goes to the pan after.

havnt heard good things about the guys business so idk about his wiring. But are you not using the stock grounds that are on the intake manifold?
