Manual trans you can get away with it as you can fill through the shifter. You're pretty screwed if the diff does it unless you want to try the breather...
They're just reselling the OEM pads, cut the middleman and go to the dealer.

The V160 is only "picky" if you're a tard and miss a shift with rediculous power. ANY tranny would fail at that point as well. MKIV's run 1K+ HP thorugh em all the time without issues.
It's really NOT sequential either, just guides it into the gears so you just push up/down instead of side to side.
If someone had great knowledge of how the tranny worked they might be able to do something like the twin stick transfer case shifters, but that's just added complexity.

1JZ is too expensive, 1.5JZ is pointless and only done if you have a 1JZ swap already done and blow the bottom end or want more displacement.
7M is a good motor if done right, but 2JZ-GE's are CHEAP and abundant locally. Only reason I haven't done it...
