No probs, a few here will tell you it's possible but if you like a trouble free engine with 0 oil leaks it isn't.
Check the Waterpump cavity in the timing case for errosion as it's quite common and causes cavitation in the pump which leads to more errosion and so on...
The other thing to consider is everything reaches a tipping point sooner or later where demand exceeds supply and prices go up, expect good 7M Blocks and Heads to go up in value as they become scarce (I ended up buying new as after checking 5 of each they were ALL junk)

The head is machined while hard so it's flat, in use the exhaust side anneals (softens) in normal running (only needs 400c for this to happen), if you just unbolt the head the hard side relaxes at a different rate to the soft side and you get a banana, unbolting in reverse sequence lessens this...
