When I was 18 and had nothing but free time and no bills I would have done it for $100 too, but in the real world things cost a lot more then that.
I think the shop is charging a fair price.
The drag from the ac pump would probably rob more power then you would make from cooling the intercooler, plus all the heat would be pumped right through your radiator making the engine run hotter.

It's a pain in the ass, but with the right tools it does not take that long. We have replaced a front turbo and a rear turbo before with the engine in the car.

I have a 4.30 in my 7M and 1JZ Supras, and it's a good match for both engines for the street or strip! The only reason I would run a 3.70 is for top speed runs or big road courses with long straightaways.
Sometimes those top bellhousing bolts alone feel like 5 hours of work!
But yeah, if you started at noon, finishing before sundown sounds very reasonable.
