The 1jz pistons have shorter skirts and are lighter. I think compression changes also. I have never cc'ed a 2jz block with a 1jz piston, maybe I will try it, to give you an accurate number.
Replace the housings, that could be your problem or the wiring could be done also. the wires in the center of the head get the most heat. Make sure that the power wire goes to the side of the housing that has the clip.

You are right on the 7M wobble thing. On the JZ engines, it doesn't need to be on that tight. I like the fluidampr design over the ATI, It looks like stock and it fits like stock. It doesn't need to be calibrated like the ATI. you set it and forget it. It's like its not even there! :biglaugh...
Did you buy it new or used? Did it just slide on with just a litle bit of assembly lube? If it was used then its most likely that someone had it machined. I have installed over 20 of these and everytime, they end up on the lathe.
Yes the ATI Damper works on both. I personally like fluidampr over the ATI. ATI is a pain to install and its a pain to remove. It also has to be machined to fit on the crank.

It's recommended to use shim under bucket with any kind of cam over 272, but the first thing to upgrade would be the springs and retainers. Valves also play a vital role, as the stock ones wont take the abuse of a high redline that long.

You could use two kinds of MAF's. My VVTi 1jzgte uses the mk4 MAF and the second VVTi I installed uses the same one as the IS300. The IS300 installs in to a pipe. I have both here in front of me, running on two cars.
