The symptoms you decribed could be alot of things. You probably won't get many responses since you left your description so broad. If it just happened all of a sudden after running well prior to, my guess would be your ISC (Idle speed control) valve, buts thats purely a guess.

You got it!! :icon_bigg Its your water temp sensor signal. Basically, the ECU is not receiving a signal from this particular sensor, so you either have a fault in the sensor itself, the circuitry between, or the ECU. :drink1:
