I'd hazard a guess and say that the stuttering your motor was doing was from trying to ignite a water/coolant mixture within your combustion chamber. Once it finally evaporated, and thus steam cleaned your piston for you, nearly free of charge, the motor began running more normally.
Is this your DD? Park it regardless before you are left on the side of the road in BFE.
Get your temp gauge fixed, you'll find most likely that you are spiking it.
Watch your coolant level, check for a milkshake under your oil cap. If you find oil in the coolant or vice/versa. stick a fork in it. Although, a compromised HG doesn't always breach at a coolant jacket.
