Anytime youi slam a car with bigger proper fitting wheels you will most likely have to roll and possibly pull depending on what you want to run. Along with that the fender liner will either need to be modified or removed.
Depends on how much tire flex/roll you want. Mk4s would be a lot better and have more used better sized tires out there. Esp if it for 1 day. The edges are going to be done after a good day on a road course. Wider would provide more grip with a wider tire and not having a ton of roll.

Iirc starion wheels are 16's. Mk4s are heavy but are prolly wider. More a of a looks thing i would think.
You want wheels for racing what kind of racing? Road races you would want the lightest wheels To get rid of unsprung weight.
Screws dont need to be adjusted hence why there blocked off with a cap from the factory. Your idle problems are else where.
And ya k&N filters will do that.
Cant really modify it but rather unscrew the factory screw out more to let more unmetered air in. Cant "tune" the stock system. Need something to "trick" to tune.
Its also pre boost. Just intake. You intake too much air then what the system has for fuel.
