If you are going to go through all the time and trouble to do such a complete rebuild, it would be foolish not to buy every ARP product for the 7m in the catalog.
All a sleeve does is allow you to press it out and press in a new one everytime you want to rebuild with out reboring the block. Like IJ said, you would have to bore the block way too much just to install sleeves that will fit anywhere near stock piston size.
My stocker stalled at 1800 rpm, two other autos i have owned never stalled above 2000. IPT as mentioned above did my converter to 3400-3600 range. Great company.
