There is no such thing as USDM head. Or any other for that matter. There are different casting numbers, but those are casting numbers, not part numbers. Excluding the homogolation head mentioned.

I think a T56 is a better choice if you are going to fabricate. There is far more aftermarket and support for it. Many different ratio's also. The Mustan Cobra, F-Body, and Viper all used the same trans, with slight differences in gearing...
Buying a shock and spring combo doesn't mean it is better. The car has shocks, not struts if you haven't picked that part up yet. A strut is a damper that replaces the upper ball joint, and carries a load.

How much pressure did you apply, and how far did it drop. Pressure can't hold forever. Afterall, the radiator is designed with a controlled leak. It should hold fairly steady. With a leak that is obvious, the pressure tester will drop pressure quickly. Like right now. Check...
Your list is fine. You don't have x-ray vision, so you won't know about extras until you are in there. With high miles, I would change the rear crank seal, aka rear main as long as you have it apart.
You could always try and shove a Toyota inline 6 in place of the Toyota inline six. They sold the Land Crusier with a bruiser of an engine, if you have your heart set on it.
And if you don't, and really just want to swap, LQ4 and LQ9 are available on Ebay. Fabrication required.
