The alloys used in a jet turbine is far different than on our puny compressor/turbine blades. The risk of stress (like JJ said) in the blade risers is much more likely. I'd replace the wheel.

Yeah...and your temps drop below that on a very regular basis. The stat temp rating tells you when it will open...nothing more. Trying to match the stat temp to what you car is doing is arse backwards...the temps your car is running at is NOT normal.

I'd just go ahead and get a 190 deg Stant SuperStat and gasket for it. Might as well swap it out when you pull the housing cover off...don't forget to remove the jiggle valve and make sure the hole is at the top ;)

You do not have to have the runners extend into the plenum, but you have to be careful with the distance between the plenum and the strut tower...you can't have it extend too far or it will hit. This limits the length of the runners...here's pics of mine:
