Not sure what 'normal' is but my car idles around 14.7 to 15 once it has warmed up, during cold start it's closer to 12.5-13

^This or like airhead said, dyno needs to be properly calibrated but your mods sound about right for stock everything minus full exhaust. Change your intake filter and go with full hardpipe and you'll notice a bit more.

Driftmotion also does injector cleaning. Sucks about the BHG, hang in there. It'll be all worth it and make you so happy in the end.

RS3's have amazing grip for turning, straight line from low MPH I can turn them over on public roads not very easily but it doesn't take much. Once they lose grip they're pretty forgiving and FIGHT to get it back, not just turn to butter and slide everywhere.
