Maybe try a torque strap? Kind of a compromise. Keep the engine from moving enough to tear the mounts, but keep the cushy rubber vibration isolation. As for handling, I would think that the 350-400lb engine moving maybe .5" would have a hard time upsetting the 4000lb girth of the mk3.
Make sure something didn't fall into the turbo inlet. Low boost and boost fluctuation are signs of a chewed up compressor wheel. As Anh said, it could also be wastegate or actuator related, or the boost controller itself.

If you measure the I.D. of the 3000 pipe inlet it is 1 7/8". The only other part of the whole intake system that is this small is the turbo outlet. IMO, if the 3" pipe fits, use it.
I did. You have to bypass the fuel pump resistor. The walbro pump won't run on the lower voltage from the resistor. Simply unplug the resistor and put a jumper wire (14 ga. or so...it draws a decent ammount of current) in the wire harness side of the plug, then you'll be good to go :bigthumb:
