I too have bought new T-stats that were bad. If it idles and no overheat but at speed it overheats I think you are having a problem with airflow to the radiator and/or water flow through the engine.
1. Are the vaccum hoses connected properly to the power steering?
2. Check your battery connections and starter connections first. I had a similar issue and two problems fixed it. 1) battery connections bad 2) connection at starter loose.
3 & 4. Maybe timing?

The second time I pulled mine I remember what a huge PITA this was, so my second install I connected it to the head. MUCH easier for me later on.

I'd pull the engine and tranny together. then pull the head off with everything attached to it. It is much easier than pulling apart piece by piece in the engine bay.

Maybe your foot just got heavier?
And it is probably more likely that you are used to driving the car now and are more familiar with pushing it to the limits. Where before, you weren't so you didn't know the ability of the Supra.
