I hate it when someone starts passing judgement on something you have, when you are their to buy product they sell. You didn't ask their opinion on what you 'should' have.

You definitely need a wideband. In my sig is a wiring diagram for the ZT-2.
If you decide to go piggyback, I have a worksheet in my sig that can assist you tuning using your wideband logs.
I have read that stock fuel pump is only 'reliable' to stock boost level.
I think 8-9psi can be run safely. Some have run more.
I run 8-9 normally with hi boost set on 12-13. I have also had rings destroyed.
I still have stock pump but won't be running higher than 8-9 till I get my mkiv...
I didn't include VF because you are basically using it to tune for WOT and when you hit WOT the VF switches to 0.

At idle the fuel pressure fluctuates rapidly 51-53psi.
Slowly applying throttle the rpm will climb smoothly.

You are not going to be able to tune closed loop with an SAFC that's why it's only suggested tune 3000~3500rpm and above, ~70% throttle, with a piggyback. If you want more control than that you'll need a stand alone or possibly MAFTpro.
I wouldn't worry to much about knock. Many have said it pretty much useless but try to hook it up if you like.
I don't know what year you have but there is a wiring diagram in my sig for '91. You need to pay more attention to signal name than wire color if you have a different year.
