I've seen this with small vac leaks. Double check for any missing or loose vacuum lines.

I tried standard multipurpose lithium grease, then moved to Lubriplate, then the polybushing stuff. ES F5 is probably just as good, but I have not tried it.

If its locked to the pulley when the engine is off and you rotate by hand (as I think you described above) then the clutch is not working properly.

The stock temp gauge actually reacts very fast, but has non-linear behavior around the normal operating temp.
