Personally I don't really care what the temp is, the gauge is more of a comparative tool that you scan while driving.
If it's doing something unusual there's an issue ;)
I just use the stock one as while they may not be super accurate (no numbers) they are fairly reliable and I don't like...
If it's in the top rad hose it's not going to be accurate till the T Stat opens so I'd install it on the motor side if you can find a place for it.
Are you still using the stock one?
Leave the belt on hold the crank pully bolt with a 19mm socket on a breaker bar then undo the Cam bolts.....
(Usually just shocking a ratchet and socket on the cam pully bolts works fine)

19 pulls in 1:45 I'd have spread that over 3 hours to let it stabilise temps.
I'd treat that motor to an Oil change and some TLC it's a keeper ;)
Personally I'd find a local brake shop and take them some samples and have correct lines made up to suit your combination.
(this is how I did my AP Racing 4 spots as they use a banjo fitting like the Mk4's)
