Just about anything can be fixed. Keep in mind, it is in an insurance company's best interest to pay as LITTLE as possible. Not that rotary powered monster... old beetles are completely excluded from the "silly VW's" group I speak of. Takes all of about 300hp to roll those things through a lazy 11 second quarter. That said, I don't think I've ever seen one break into the 9's in person either. 10's all day long there...

Actually had to look up Tango Uniform... In my experience with heating and Mk3's, it is usually the problem behind door number 3 here. Try opening the valve with your finger (push the plunger upward) and see if that un-sticks it. I am starting to think your suggestion is what might be wrong...

Agreed with everything above. Keep the resonator, maybe change out the muffler. Or, buy the RSR setup. You won't get louder without running open downpipe. Still my favorite exhaust for day-to-day driving, but it suuuuuuuuucks for road trips when you don't have the silencer. On a 7m, it is loud...

You know... even though it is in a ~3800 lb car (LS400) with an auto behind it, I find that the 1uz is a great engine. Good response, and plenty of power for only being a 4.0L. Would be a lot of fun with a manual behind it... Quite a bit less actually. the 1uz is right around the 370-380 lb...

Chris, your oil "problem" is merely the design of the 7m. I would highly suggest that you spend some time reading through the oils and lubrication sub-forum on here, you will learn a LOT about how these cars were made/operate. ;)

Sounds like you could stand to learn a lot from IJ. He has been down the path you're contemplating. Also, if you have the funds, I would suggest giving Titan Motorsports a call. IIRC, they can still get fresh 2j blocks/heads, etc.
