For the guys suggesting the starter motor, how do you plan to torque it back up to 195 ft-lbs on reassembly? You need some way to lock the crank, either at the ring gear, or by using those gadgets in post #7, or throwing a 2x4 into the crank if the oil pan is off.

If coolant rises above the thermostat opening temp then you are out of coolant capacity, but that capacity limit can be mitigated, for example by turning on an electric fan, if air flow limited such as at idle or low speeds.

The 60-1 can flow more air (up to 60lb/min compared to 45lb/min for the 57), but its going to be hot air given the poor efficiency above 15 psi. The only way to get more than 40lb/min in the 7M is to run more boost (>20psi) or improve VE with improved head flow).

I've plotted a 7M-GTE running at a pressure ratio of 2.4 (about 20psi boost) for two rpms (5500 and 6500) on compressor maps for the 57 and 60-1 setups. The 7M data comes from figgie's spreadsheet, so look there for the assumptions. Target is 400 hp.

The ECU permits one 16 bit read from RAM every 2.1ms (7.5kB/s). That is the best that you can do without rewriting the ECU diagnostics code. The serial port is running at 1 Mb/s, so more could theoretically be extracted, but would need to be careful since it is shared with the ADC.

This is the 7MGTE ECU running in external mode on the FLASH board. The code is being run in SRAM, so it can be changed on the fly. All the tables, etc. can be changed in real time. A nice GUI to do that is being worked on, but is not ready yet.

In order to generate more heat it would presumably need to be removing more heat from the cabin, an unlikely scenario given that R134 conversions are less efficient than with the original R12 charge.
Servicing the injectors is a pain. One thing you can do is just listen to the exhaust. The 7M idle is very uniform sounding if all is well. If you hear a rhythmic sound then that would indicate a cylinder or two is out of spec.
It seems you are right on the threshold of what the ECU thinks is out of spec. I wouldn't rule out a lazy injector either here, but at some point you need to make a cost-benefit decision about whether this really is worth the trouble to diagnose further.
