If they have a torque plate for a 7m then they probably have 7m experience.
If all you're doing is the head gasket then yeah, there is no need for a torque plate. It would kinda get in the way of machining the deck.
If "all my fluid just spills out" you have a pretty obvious problem. One that you are capable of taking care of without asking about it. Find the leak. Replace what's leaking. Bleed the system. If you still have issues, ask away. Logical order for future reference.

I'm not trying to be an ass. It's just a whole lot easier to help when you know what is being asked. If I assume that I know what you are asking I put you in danger of losing time, money and motivation. I don't want to do that. Your car will do its best to do that without my help.
That being...
I don't see how it could hurt anything. As long as you do it in small increments, one at a time, I can't see the head lifting enough to hurt your gasket whether it's mls or composite.
