I believe you have an issue with your RPM signal. If you key on and the RPM jumps by itself, there is definitely an issue there. It should obviously be at zero. I know you said you are running it like a piggyback so maybe there is a wiring issue.
If you remove the Stinger from the car and...

I was just going to type the only thing that grill needs now is some powdercoating and then I scrolled down to see that it was powdercoated.
Sweet man!
Have you changed the oil and refilled with five quarts? What grade oil are you using? Use the Toyota filter to rule out an issue with that. Any leaks? How is the gasket in the pick up in the pan?
For reference, I get 60-70 on a cold start up with 50F temperatures.
At operating temperature idle, 190F, I get 20-22 PSI.
At Cruise around 2000-2200RPM I get 50 PSI.
In boost pulling to 8000 RPM, I get over 80 PSI. Can't really watch it as I have to keep my eyes on the road. I do have a...
I am not familiar with the Megasquirt. It can control the transmission too, how do you intend in controlling that?
I was talking to Ian and he said all that would be needed if using the AEM, would be to have it send the TPS signal to the stock auto computer and that's it.

Corolla for a daily! I tell everyone this.
Get the standalone man. It's worth it when it comes to 1JZ ECUs. The next 1JZ swap I do will be ran off a 2JZ computer to avoid the bad ECUs.
How are your funds? If you could, get a ProEFI 48 ECU with a pin kit and make your own harness. It runs less than you think.
If you want to take the guess work out of stuff, get the AEM plug an play kit and just tune your car. You have a lot of power to unlock with the 3.0L bottom end.
