how do you know you're running rich? wideband readings?
our cars run pretty rich stock. as rich as 10.0:1 a/f under boost.
to rich will wash the cylinders and contaminate your oil.
I have the same problem. It creates a lot of play in the accelerator pedal before it picks up the cable.
Taking up the slack is done by moving the nuts closer to the passenger side, then tighten the nut on the other side down. I've adjusted mine all the way out but still have slack.

If you meet the safety requirements, i.e. battery tie down,..., I'm sure they'll let you enter. Just go with the intent to have fun and see how your car handles. I wouldn't expect to win cause our cars are so very heavy. But it is a blast. I've gone a few times. Good luck and have fun.
