An exhaust shop can probably do this for you if you're friends with someone who works there. Most of the exhaust shops don't want to touch a car that doesn't have a cat, that's why I'm saying it like this.
Otherwise, BIC (a vendor on here) should sell a testpipe, you may also find cheaper...
There's not going to be much a difference to fuss over. I'll take the loss of ~5HP over the noise the open DDP makes. BTW, if you're in boost, and not just full boost, it will still be noisy
Gapping Iridiums aren't that hard, just take your time and be careful, you use the same principles gapping all other types.
BTW to the OP, the Recirculated Divorced Down Pipe I mentioned already has an integrated turbo elbow built in, it's a one piece replacement for your two piece DP ;).
I'll put in my two cents on some points as well:
1.)Coming from personal experience, a 3" exhaust seemed to add power all across the board on my car. I did not notice a drop in power ANYWHERE.
2.)The MKIII is not OBDII, so no worries about the cat being removed. Just make sure you don't get...
Eh, I'd hold off on that MHG until you find out how much material has been removed from the block and head if you're aiming for close to the same compression ratio as the motor was intended to have.
