oil choice suggestions for rebuilt engine

Ok so I'm currently breaking in my built 7M and its on a diet of straight 30W ran Rotella T1 for approx 500miles now its running Castrol HD30 until approx 1000miles where I plan to switch to a conventional 5W-30. The oil pump has been shimmed approx 3.5mm and it has a full flow oil cooler setup running a 12 row cooler -10 all the way. I can buy Redline oil locally as well as Eneos and Rotella T6. GC I can no longer find without ordering. My question is with my setup once I'm ready to switch to a synthetic will Redlines 40W oils be too thick? T6 is around 13.6cst and Eneos 5W40 as well. GC was 12.1cst IIRC. Redlines 40W oils are in the 15cst range. Their 5W30 and 0W30 are 11.9 and 11.7 respectively. Basically what viscosity range should I keep within if my choices were Redline, Rotella or Eneos.

Also to add my turbo is only oil cooled (TD06-20G) If that affects anything.

T6 would be an excellent choice in Houston and less expensive than my 2nd choice, Redline 0W-30. Redline 5W-30 is excellent as well.
You won't go wrong with any of the three. ;)

Well I'm 80 miles away from 1000 miles. I'm going to run 10W30 at 1000 miles and run it for anotber 500. I've read the thread on when to switch to synthetic oil I'm wondering if 1500 miles is too soon. I noticed on Redlines website they suggest 3000miles? So my question is switch to synthetic at 1500 or 2000?

Is GC not available anymore? I found Castrol Edge 0W30 at Autozone a while back. It said on the bottle that it was formally 0W30 Syntec. It also said "European Formula" on the front and "Made In Germany" on the back. Is that not the same stuff?

Sorry JD, not trying to thread jack. I saw in your first post you couldn't find it anymore without ordering. You don't have this where you live though? Thanks in advance guys.

The Castrol Edge 0W-30 is GC but the stores around me dont carry it anymore, you can get it just have to order it. Its the same stuff though.
