just took measurements for hg used calu. on site. #s for hg came in at 2.1999999 is it alright to use 2.0mm hg? do i have to go higher?

If you have removed a certain amount of material from the head to make it flat, you run the risk of warpage. Keep that in mind.

And use the full thickness gasket to maintain compression ratio.
