To me the touch is not worth jailbreaking, but the the iPhone is a little more worth it, seeing as how you have to jailbreak it to use it with other carriers than cingular and at&t. It just depends what you want out of your Touch. If you want more options, customization, and networking...

I own an iPod Touch 16Gig, have had it forever it seems like. I love it. Most of the Apps Apple offers are garbage, the most useful one I have is mobile banking from Bank of America. I vote jailbreak it man, you can do all sorts of stuff after that. I also just picked up an 2G 8gig iPhone...
