That's an average price for what they are asking, most of that cost is in the valve guides I'd say. You shouldn't need to lap the head once they are done with it, just make damn sure you get the block lapped correctly and check with a straight edge.
The original Toyota gasket kit will be your best bet in getting EVERY gasket and seal needed to change out the old ones ;). It may cost you a little more, but think of how long they last (the ones you've got right now are probably the originals and I bet most are still in decent, non leaking...
Like I said man, if you need a gueane (sp?) pig to test some of this stuff out on, I'm willing to help you out (you may have a problem getting the stuff back from me though...) ;).

Atoms are FTW, without them creating molecules that make up my oil I guess I'd be SOL ;). Oh yeah, a good oil filter is FTW too. I'll take the billions of micro-particles in my oil over the shit (excuse me) in any snake oil ANY day of the week ;).
