my car would do the exact same thing, and I tried and tried to figure out the problem, It ended up being my radiator cap! i didn't suspect the cap, because it was new from Toyota, but I guess even toyota can't get it right all the time!...I would suggest you get a new one, or at least pressure...

If I were you, I wouldn't worry about it so much, and just put Synthetic oil in the next oil change to clean the oil passages a bit (or a quart of ATF)...
Of course that is just my personal opinion though, my .02.

Well then what are you worried about? Keep driving it and see what happens, I personally think that the overheating problems were caused by your electric fan.

Yes, that's exactly what my car does, and even at normal operating temp...touching the engine will likely burn you. Is the stock fan loud while you are driving? Can you hear it "fanning"? LOL So the guage says it's fine, then?
