They should ALL turn easily...
Try playing musical buckets until they do.
If the Shim and Bucket don't turn you're going to get some weird wear patterns on them and eventually lose the taper on the nose of the cam.
Try a piece of pipe on the throwout arm if you have room as it will apply the force squarely where it's needed, might need a helper to wiggle the trans.
And the old guy learns something new :D

If I'm out for a long drive I'll take a screw cap bottle and drop it between the seat and door, it's easy to reach and out of the sun so actually stays cold for awhile.
If I'm drinking I'm not driving hard so it takes little pressure/effort on the wheel, this car is an auto so that helps but even with a manual I seem to manage.
Hold drink in my right hand with the heel of my hand on the wheel and shift with my left, once the shift is done steer with my left...
