And where is you're proof of that? I know you say that theoretically it will break down the viton, but in real life experience I have not seen this cause any detrimental effects. I have built lots of engines with copper spray on a new HKS mhg with a 100% success rate. Even if it did break down...

The spacing is different, and the size of the bolts is different. It's just different. The two top bolt holes are 4 3/4" apart (center to center) on a 1jz, and 5 1/8" apart on a 7m. I just measured.
The Southbend clutches do look to have been heat treated, I have one at the shop. You can tell because the surface of the spring gets discolored from the high temperatures.
They all use the stock pressure plate to start, but it is disassembled and the spring is heat treated for more clamp pressure. On really heavy pressure plates they double up the spring.
