You have a tubular manifold? They make a pretty significant difference in sound from my experience.

Use some FIPG (RTV, silicone, are other common names) where it says to
Torque spec is 22 INCH pounds not ft/lbs
Keep all the surfaces super clean on the install
I recommend you use all new bolts and new factory...
I run bolts that are a little shorter up on top, since I don't have a coil pack cover or the little plastic cover over the wire harness just behind the timing cover. They just look a little goofy sticking was beyond the welded nuts they screw into.
I find it highly unlikely that oil hitting the exhaust manifold is coming from the intake side of the motor.
That being said, it could be a really bad valve cover leak on the exhaust side. You also just happen to have one on the intake side too.
Do you have the rear seal on the hood still in place?
One other thing, my mom's Durango's rear pinion seal started to leak everywhere and she told me she was smelling gas while driving.
Check your transmission and differential for leaks.

On the thread, I'm not really 100%. They're probably M6x1 and something like 25mm long. Also there is one M6x1 nut you'll need as well.
Wait for someone else to confirm those numbers.
That radiator light is the low coolant warning. The sensor is in the overflow bottle.
Somewhere on here is a picture/thread about the sensors on the thermostat housing. Enough searching should find it.
Since you don't seem to know about this resource or the TSRM...
Don't jump to BHG quite yet.
Check/replace your radiator cap
Fix whatever that leak is
Replace the thermostat, also check if its got the jiggle valve pointed up.
Make sure the radiator is filled, and not just the overflow bottle.
As for the hesitation, check error codes, see what you've got...
