whats the best method to clean the surface?

Can anybody tell me how clean the surface needs to be? I having a hard time cleaning it. Im putting a stock 2jzgte headgasket on...i have cylinder 1/2 pretty shiny and its pretty smooth im not sure if its enough tho...
