Sounds like you have some major wiring harness issues. But could be a ground somewhere not connected or rusted or whatever.

How far up is it "shooting"? It would definately help if you gave more details such as if your driving, Is your a/c on, any mods to cooling system such as electric fans.etc It sounds to me like your thermostat is sticking and not opening right away at the right temperature.
