I have removed the A/C and most stuff associated with it and now i found a 2 wire plug that is located in the dash on the right side. It is the in car A/C sensor (red circle in pic). Is it ok to just remove it or do I need it for the heater to work properly and if so how should I wire it in?

It's very important to the heater. Since it's not even connected to the AC system ("ac sensor" is a misnomer) there's no reason to mess with it.

On the next page:

Everything to the left of the G-O wire, everything connected to the "heater control assembly", should be retained. Everything to the right of the wire is AC related and can be removed. I'd keep the fan wiring and water switch # 2 though.
