I had the block and head milled at a reputable shop. They took .01 off the block deck. My head has been milled a few times. It has at least 2 stamp marks. The shop said they didn't have the tools to measure what exists.

I don't know how to determine where/how to measure the head to order the right cometic HG.
The milling has started to flatten the bottom (indicator?). The machinist said that the second row in on the head is the indicator to how low it can go and that clears the mill.
How do I measure to get to stock compression ?
