The cooler itself seems a little small. I'd personally just save up another few weeks and get the proper relocation kit, an n/a oil adapter for the block to remove the turbo bypass cooler setup and get a thermostat to allow you to run it right. As a bypass cooler, it's not going to improve anything significantly over what you have right now.

The PermaCool oil coolers are not that good...especially in a location where rocks/debris can hit the cooler. The fins are going to take a hit (bend) and the cooler is not that efficient. A better, more efficient (but a little more expensive) choice is a stacked plate cooler like a B&M or Long TruCool...this design is also a lot more sturdy. You want a 7"x11"x1.5" at minimum.
Replacing the cooler using the stock filter head is not going to help much either. Oil only flows to the cooler above ~40 psi due to the relief valve in the filter head...it's not the best IMO to keep your oil at ops temp. A sandwich plate and thermostat is a much better alternative...it uses oil temp to control flow to the cooler, not pressure like the stock set-up does. Plus you won't be bleeding pressure off and dumping oil into the pan.

You want the 3/4x16 thread and you will need an NA block adapter per above. You will also need to install a bolt/washer to plug the pan for the stock filter return...12x1.25mm iirc. The stock filter head can still be used, but you will need to cap the old oil cooler feed line off.
This set-up will keep the filter in the stock location for now, but allow installation of a remote filter head in the future. Basically you will have 2 circuits...one for the cooler using the sandwich plate and one for the future remote filter. When you get around to installing a remote filter, you can do away with the stock filter head all together by using an adapter.
AN-8 (1/2") will be fine for your hose...the AeroQuip socketless is good hose.
