Well I'm sitting here at work and there was a book on the desk foir Labor Estimation Times for Imports from 73-02. So I figured why not wander through it.

I'm looking at labor times for the Supra and found that to do a headgasket it is estimated at 10.3 hours, and a complete 7M-GTE assembly is estimated at 11.3 hours.
only an hour more to tear down the whole engine.
For the NA guys the HG is estimated at 7.8 hours and the engine assembly is 10.3, or as long as the GTE HG takes

For shits and giggles while im in here the 2JZ-GTE HG is estimated at 12.3 hours and engine assembly at 21.2 hours.

Just some random info for those as bored as I am at work.

That is changing an engine assembly, not overhauling. In other words, putting in your prescious JDM longblock. That is why it isn't much different than just removing and replacing (R&R) the cylinder head.

R&R pistons is probably close to 30 hours paid.
