On a 7" Rim.......255's are already PRETTY damned wide. For a typical 7" rim, I'd think 215's to 225's would be ideal. (Probably steering more towards 225). Of course, you can put bigger....but your sidewalls can only fold in so much before it starts becoming dangerous/ridiculous looking...
