Are you planning on doing a FFIM mod? ;) The EGR actually keeps you EGT's lower, but it won't hurt too much to remove it, just keep an eye on your EGT's.

If steam is coming out of the rad cap, then it's quite possible that steam can come out of the overflow also since the vacume assisted hose to the resivoir is right under the rad cap ;). Replace and report back...
I wouldn't even start that motor up for the first time unless you've got a wideband installed. With that turbo, and the wastegate set at 10psi, I'd say you'll be hitting fuel cut pretty much every time you hit full boost. That turbo "should" be moving lots more air at 10 psi than the CT would.
