If you've got the time, absolutely check the valve (shim) clearances. Can't hurt one bit, and it'll save you from taking it all back apart again down the road if one is slightly loose and starts making noise.

There's plenty of information about the correct way to hook up a catch can.
two valve covers teed into one hose, going to the catch can, and off the other port run a hose going to the accordian.
I forget what size hose they are... just bring a 1" section in to a parts store and match it up... I'm almost positive I used actual oil cooler hose, if not transmission oil cooler hose. Held up fine for me.
