One thing for sure, copper is a great gasket meterial as they are softer/malleable and can seal up in between when torqued.
In your case, I don't think it is necesary to go that far. A normal factory spec gasket with new Studs and nuts will work fine. Copper spray is great for this.
But...
I think the water wetter is more effective when you are actually running straight water and no coolant. Its not very effective with coolant. I readi on one of the hot rod sites.
