Water cooling is better for the turbo. After the engine is shut off, the turbo will heat soak (as there's no oil flowing to it anymore) and the oil can coke (this was the original reason for turbo timers). Water cooling will thermo-syphon and continue cooling even when the engine is not running.
No they didn't adopt the later torque, and no a retorque usually isn't a good idea. Retorque also won't stop a leak on a factory style gasket.
Best bet is to save up for a metal head gasket install.
Been a thread on these before, the main issue is that the rotors are going to be hard to source if you need to replace them (while arz's kits use off the shelf wilwood units). The rotors are of unknown quality as well...
Speed sensor in the cluster is used by the ECU for quite a few things (cruise control for starters).
I imagine anything is really possible with enough time/money/skill. Making custom guage faces isn't that hard (it's just seriously tedious) so fitting the guage in the cluster would be the hard...
